Sweet & Savoury Chicken Fajitas

California Prunes add a touch of delicious sweetness to this savoury recipe – and what a bonus that they are so nutrient packed. Good luck saving any leftovers because there might just not be any!

  • 12 small tortilla wraps of choice
  • 8-10 California Prunes, quartered
  • 8-10 boneless/skinless chicken thighs, sliced into strips
  • 1 medium yellow onion, thinly sliced
  • 2 bell peppers (colour of choice), thinly sliced
  • ¼ cup (59 mL) olive oil
  • 4 cloves garlic, minced
  • 25g taco seasoning of choice, or more to taste
  • 1-2 tbsp (15 mL-30 mL) honey
  • ½ cup (118 mL) shredded cheddar cheese, or more to taste


  • 1 tomato, diced
  • ¼ red onion, diced
  • 1 avocado, sliced
  • 2 tbsp (30 g) fresh cilantro, diced
  • 3 limes, sliced into ¼ wedges
  • Sour cream, optional


  1. Preheat oven to 425°F (218°C).
  2. Prep the chicken and veggies. Slice each chicken thigh into thirds or strips and then add into a large mixing bowl, set aside. Mince the garlic, slice the onion, then slice the bell peppers (this recipe uses a mix of red, yellow, and orange pepper for an extra pop of colour!). Add all into the large mixing bowl of chicken.
  3. Slice 8-10 California Prunes into quarters and then add them into the mixing bowl.
  4. Into the bowl, add olive oil, taco seasoning, and honey. Mix thoroughly to combine.
  5. On a baking tray lined with parchment paper, evenly spread out the chicken veggie fajita mix. Place in the oven and bake for 20 minutes.
  6. Meanwhile, prep your toppings: dice the tomato and red onion, finely chop the cilantro, slice the avocado, and then limes into wedges. Set aside.
  7. Once 20 minutes is up, take the chicken out of the oven and sprinkle shredded cheddar cheese all over. Place back in the oven for another 3-5 minutes until the cheese is melted.
  8. Remove from oven and add all the toppings: tomato, avocado, red onion, cilantro, and sour cream. Serve with lime wedges and warmed up tortillas, enjoy!
