Festive Granola with California Prunes

4 cups whole grain rolled oats (1 L)
1 cup California Prunes, chopped (250 mL)
½ cup almonds, chopped (125 mL)
½ cup walnuts, chopped (125 mL)
1 tsp. cinnamon (5 mL)
1 tsp. ginger (5 mL)
½ tsp. nutmeg
3 tbsp coconut oil (45 mL)
¼ cup honey


Pre-heat oven to 325F (160C).

In a large bowl, combine oats, California Prunes, almonds and walnuts.

Add spices, coconut oil and honey. Mix until combined.

Cover a baking sheet with parchment paper. Spread mixture evenly on baking sheet and bake in oven for 20 to 30 minutes, stirring 2 to 3 times, during the baking process.
