Prune, Tomato & Feta Salad
Combining Prunes, tomatoes and feta cheese in a simple vinaigrette, this salad is great on its own or served with greens.

Ingredients
- 2 pints cherry tomatoes, each cut in half
- 1/2 cup crumbled feta cheese
- 1/2 cup thinly sliced red onion
- 1/2 cup (about 3 ounces) finely chopped Prunes
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 teaspoon crushed garlic
- Torn salad greens (optional)
Directions
In medium bowl, combine tomatoes, feta cheese, onion and Prunes; set aside. In small bowl, whisk together oil, vinegar and garlic. Add to tomato mixture; toss lightly to coat. Serve with salad greens, if desired. Click here for the low fat version
