Dark Side of the Prune
Cheers! You’ll surely want to raise a toast with this light and refreshing beverage with notes of California Prunes and citrus. Recipe courtesy of Chef Oomed of PLANTA Queen.

Ingredients
Prune Puree
- 1 cup dried California Prunes
- 4 cups water
Cocktail
- 2oz sparkling wine
- 1oz Cointreau
- 1.5oz California Prune puree
- .5oz lemon juice
Directions
Prune Puree
- Add ingredients to a pot and turn heat on high.
- Bring to a boil and then simmer for 10 minutes (stir periodically).
- Take off heat and add to blender.
- Blend for 2 minutes.
- Strain into 1L container.
Assemble
- Add Cointreau, lemon juice and prune puree into a shaker.
- Add ice and shake vigorously.
- Pour into a teardrop glass.
- Top with Cava sparkling wine.
- Garnish with fresh California Prunes (3 pieces).
