Dark Side of the Prune

Prune Puree

  • 1 cup dried California Prunes
  • 4 cups water



  • 2oz sparkling wine
  • 1oz Cointreau
  • 1.5oz California Prune puree
  • .5oz lemon juice


Prune Puree

  1. Add ingredients to a pot and turn heat on high.
  2. Bring to a boil and then simmer for 10 minutes (stir periodically).
  3. Take off heat and add to blender.
  4. Blend for 2 minutes.
  5. Strain into 1L container.


  1. Add Cointreau, lemon juice and prune puree into a shaker.
  2. Add ice and shake vigorously.
  3. Pour into a teardrop glass.
  4. Top with Cava sparkling wine.
  5. Garnish with fresh California Prunes (3 pieces).
