Chocolate Mousse Overnight Oats

These chocolate mousse overnight oats taste like dessert for breakfast but are secretly packed with healthier ingredients! Plus, they’re topped with a decadent chocolate mousse made with California Prunes!

These California Prunes make the creamiest mousse texture and contain antioxidants, vitamins and minerals that are sure to fuel your day.

Servings: 1 large jar or two small

Ingredients

Oats:

  • ½ cup rolled oats
  • 2/3 cups almond milk
  • 1 tbsp chia seeds
  • 1 scoop vanilla protein
  • 2 tsb maple syrup

Mousse:

  • ¼ cup Greek yogurt
  • 2 California Prunes
  • 1 tbsp cocoa powder
  • 1 tbsp maple syrup
  • 1-2 tbsp water

Directions

  1. Combine all ingredients. Then refrigerate 2hrs-overnight to set.
  2. For topping: blend together ingredients till smooth, adding 1-2 tbsp water till desired texture is reached.
  3. When ready to eat, layer oats with Greek yogurt, followed by the chocolate mousse. Top with cacao nibs and enjoy!
