California Prune Glazed Airfryer Drumsticks

These California Prune glazed chicken drumsticks are addictive and impressive to serve, but they are easy and quick to make! With a delicious California Prune based glaze, the drumsticks are cooked in the air fryer to juicy perfection. This dish is the perfect way to enjoy the delicious flavour of California Prunes. Enjoy the dish as an appetizer or serve with a side salad for lunch.

Ingredients

  • 8-10 California Prunes
  • 8 Chicken drumsticks, skin on
  • 1 tablespoon olive oil
  • ½ small onion
  • 1 garlic clove
  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 1 cup chicken stock
  • Juice of ½ lemon
  • 1 teaspoon soy sauce or tamari
  • ½ teaspoon chilli sauce
  • Parsley flakes for garnish (optional)

Directions

  1. Start by roughly chopping the onions, garlic and California Prunes
  2. In small sauce pan, heat the olive oil then cook the onions for a few minutes until softened
  3. Add the garlic to the pan and continue to cook for another minute
  4. Add the chopped prunes, salt, and cayenne pepper and cook for 2-3 minutes
  5. Pour the chicken stock in the pan and allow the sauce to simmer and reduce on medium low, for 10 minutes
  6. Remove the sauce from the heat and allow it to cool for a few minutes, then puree in a blender or using an immersion blender
  7. To the pureed sauce, add the lemon juice, soy sauce, and chilli sauce. Mix to combine
  8. Season the drumsticks with a sprinkle of salt and pepper on all sides
    Marinate the chicken in the California Prune sauce, ideally for 1-2 hours
  9. Air fry the chicken on 350°F for 18 minutes, making sure to flip it halfway and baste it with the prune sauce a few times
  10. Remove the chicken when cooked through to an internal temperature of 165°F and allow it to rest for 5-7 minutes
  11. Garnish with parsley flakes and serve
