California Prune Breakfast Oat Pudding

Ingredients
INGREDIENTS
½ cup oats, dry
1 cup water
¼ cup California Prunes, finely chopped
1 tablespoon almond butter
¼ tsp ground ginger
1/8 tsp grated orange peel
1/2 cup vanilla non-fat Greek yogurt
1 teaspoon maple syrup
1 tablespoon sliced almonds
Directions
Mix oats, water, ginger and 3 TBSP of the prunes together. Microwave on HIGH for 2 minutes. Remove from microwave. Stir in the almond butter, Greek yogurt, maple syrup and orange peel and blend well. Top with the remaining prunes and sliced almonds.
