California Prune and Peach Flatbread

This California Prune and Peach flatbread is the perfect sweet and savoury summer dish! A lemony mascarpone cheese base topped with healthy California Prunes and peaches, and then baked until golden brown and topped with a sweet and tangy balsamic glaze! Prunes naturally contain potassium, vitamin K, and polyphenols (antioxidant-packed micronutrients), which work together to protect the bones. They are also a good source of fibre making them a great addition to your summer flatbread!

Ingredients
- 4 round flatbreads, or naan bread or pita bread of choice
- 8 California Prunes
- 2 peaches
- 2 cups (181 grams) mascarpone cheese
- 2 tbsp honey
- Zest of 1 lemon
- Balsamic glaze
- Fresh mint leaves
Directions
- Preheat oven to 350°F (176°C).
- Chop the California Prunes into bite-sized pieces.
- Carefully slice the peaches in half and gently twist to remove the pit. Slice the peaches into thin strips (half-moon shape).
- In a small bowl combine the mascarpone cheese, honey and lemon zest. Mix until evenly combined.
- Place the 4 flatbreads on a pizza tray or sheet pan. Evenly distribute the mascarpone cheese mixture between the flatbreads. Spread the mascarpone cheese over the flatbreads leaving a 1/2 inch border.
- Evenly distribute the peach slices and chopped California Prunes on the flatbreads.
- Bake in the oven for 5 – 10 minutes or until the crust has browned and the topping are warmed through.
- Remove from the oven and immediately drizzle with balsamic glaze and top with fresh mint leaves.
- Slice and serve warm. Enjoy!
