When I hear the word prunes, I’m instantly reminded of this California Prune Walnut Cake that I ate all throughout my twenties. It’s sweetened with a rich prune pureé and brown sugar, and hits all the warm, caramel-y, spicy notes you’d expect. It’s nothing short of decadent. I love sweetening my desserts naturally where I can, and California Prunes really allow me to do that. The magic to using them in a baked good is a prune pureé – it allows you to bring an even natural sweetness while also adding moisture to the cake.
