When I hear the word prunes, I’m instantly reminded of this California Prune Walnut Cake that I ate all throughout my twenties. It’s sweetened with a rich prune pureé and brown sugar, and hits all the warm, caramel-y, spicy notes you’d expect. It’s nothing short of decadent. I love sweetening my desserts naturally where I can, and California Prunes really allow me to do that. The magic to using them in a baked good is a prune pureé – it allows you to bring an even natural sweetness while also adding moisture to the cake.

It’s the perfect dessert for anytime of the day, whether that be midday tea or as a late-night treat. This lightly spiced prune sponge is studded generously with walnut pieces, chopped California Prunes, and toffee bits. It’s baked to golden perfection, and then poked and covered in a warm caramel sauce. The caramel balances out the rich, dark flavour from the prune cake, and the result is just sublime.
